Mac: You won't find a shortage of great plain text editors for Macs, but FoldingText brings a few new things to the table. These include Markdown-style auto formatting, an interesting text hiding mechanic, Applescript automation, and more.
At its core, FoldingText is a pretty straightforward plain text editor. Underneath the hood are some neat features though. For instance, you can create a new header for a document simply by hitting the '#' sign. Underneath that, you can hit '-' to automatically create a to-do list box, or just type away a few lines. When your document gets long and out of control, you can click on the '#' sign to fold the text up so you don't have to look at it. The folding makes organizing big documents a lot easier, and navigation is simplified. You can also set up a Pomodoro style timer. FoldingText is less of a text editor than it is a text outliner, but fans of plain text editing should check it out. FoldingText is still in beta, and while it is you can try it out for free from the developers site below.

Text Compare by Binhduong is an online service that allows you to easily compare and find differences between two texts. Even though you cannot download Text Compare for Mac, there are many other tools that you can install to cope with this task.

BBEdit is still a decent option after all these years. And from the opposite end of the evolutionary spectrum, there's Eclipse in all its newcomer-befuddling array of versions, packages, and plugins (give Aptana a try).

Definitely a very popular one that I used for a while. It a lot of features, too many for my taste, including code folding, php support, and auto complete
I've been using it for over a year now as an a alternative to Dreamweaver. I've heard code folding will be in the next release. So it's one you should definitely keep an eye on.

Espresso is super Mac-like and has code folding and PHP support. It autocompletes ending tags, but I think that's all. Feels clean and responsive.

Sublime Text 2 gets my vote. Really nice interface, infinitely customisable, code folding, autocomplete, and some very useful features.
